Shhh...It's a Surprise for Daddy!

In addition to the normal, boring Father's Day gifts, we decided to surprise Daddy with one of his favorite things...pickled okra! Never heard of it? Me neither, until about a year ago. (Quite frankly it sounds disgusting, and I refuse to try it, but Aaron loves it!) Well I came across a recipe for SPICY PICKLED OKRA not too long ago and thought he'd appreciate getting some homemade treats!First I enlisted the help of a very talented sous-chef.
She was a little aggravated by my request, as she was in the middle of lunch, but as soon as I said "do you wanna stir?", she was ready to go!

We washed about a pound & a half of fresh okra. One, by one, by one...

I was surprised at how quickly we needed a "yoyipop" break, but whatever works.

We divided the okra between 4 1-pint jars...

Then, to each jar, added a garlic clove and a sprig of fresh dill.

In a saucepan we mixed 2 cups of cider vinegar, 1 3/4 cups of water, 3 tablespoons of sugar, 1 1/2 tablespoons of kosher salt, 1 1/2 tablespoons of mustard seeds and 1 teaspoon of crushed red pepper.

We let it come to a boil for 1 minute, then took it off the stove to sit for 5 minutes.

Last, we divided the liquid amongst the 4 jars, sealed them, tied on a cute ribbon, and TA-DA we have a very special treat for Daddy made with lots of love!
We'll be sure and let you know if (Daddy says) they taste good!
