It’s nice to finally {almost} have our first week of everybody in school under our belt. It was a tiring one, but hopefully we’ll get into the swing of things fairly quickly.
Last Friday we enjoyed our last lazy pajama morning for a while. Alex and Boo came back from a week at Disney with lots of treats for the kiddos. Watson is constantly wanting to wear Emory’s dress up clothes, so I was excited to see a that they got him a Buzz Lightyear outfit as well as a Cars outfit. And Emory added a Pocahontas dress-up to her collection. {She was most excited about the ‘tattoo’ on the sleeve!}
Now that she’ll be stuck in a school uniform for the next 14 years, I’ve been letting Emory wear whatever she wants when we’re at home. {If you know me well, that’s a HUGE deal!} Lately she’s been getting out of bed in the morning and putting on something dress-up related before even leaving her room. Today it was high heels.
She’ll also be eating lunch at school everyday for the first time. For her last lunch with us at home she requested turkey roll-ups and grapes!
I have had a hard time getting a homemade meal on the table each night lately, so my new goal is to have at least one of the recipes I make each week be one that can be doubled {or tripled!} and frozen for another day. We are huge breakfast lovers, so this week I tried a ham and cheese quiche. I doubled the recipe and after making two, still had a good bit of leftover egg mixture left. I also had some mini phyllo shells in the freezer so I added a little shredded mozzarella to the shells and filled them with the egg mixture. I popped them into the toaster oven for about 8 minutes and they were DELICIOUS! I don’t think they would freeze well, but they were a fun discovery and would make a quick, cute and yummy Saturday morning breakfast. Aaron suggested sprinkling bacon over the top, so I’ll definitely try that next time.
As for the original recipe itself, it may have been Top Three best tasting meal for the ease {and price!}. It’s easy to double and can be made ahead, then just reheated for 15 minutes in the oven. {Let me pause, before you think this is going to be what you serve three nights a week, to say that it’s NOT healthy. I mostly use recipes out of Cooking Light magazine, so throwing in a heavy cream laden dish is okay every once in a while since we eat relatively healthy most days.}
My one complaint would be that there’s a little too much {that’s rare!} cheese, which may be why I had so much egg mixture left. Next time, I’ll try to use 3/4, maybe even 1/2, of what the recipe calls for.
On a not-very-hungry night I would serve this by itself. If you want to make it more of a rounded out meal, I’d serve it with mixed greens and a light dressing. Either way, it’s delicious, so definitely try it!
My biggest Baby Boy packed his little lunch box and stayed at school for lunch and nap for the first time. He was so excited to hold his lunch box, and although he didn’t nap very long, his teachers said he did very well.
When I picked him up that afternoon, he was so happy to see me!
Emory's first day of school was this week, and while it was kinda a rough start, she’s already finding her way and becoming more comfortable with the changes. I’ve been trying {without much success} to get the house put together ever since we moved. After enlisting the help of Shannon, decorator extraordinaire and friend, I was forced to go antiquing for the first time. Yes, there are some hideous things out there, but there are also so really fun finds! I could have bought and bought and bought all of the old serving pieces I saw, but I’ve been wanting an old wooden crate, and I found one! It still had the original 24 glass bottles from the water bottling company here in South Carolina. It was a fun first, and although I don’t think I’ll ever be the type to scrounge forever looking for the perfect antique piece, I’m excited to go again and see what I can find!
The littlest boys and I are off to the grocery store to prep for having friends over for dinner tonight. We’re hoping for a laid back, relaxing weekend before another busy five days of school next week!
